Very Dairy Shamrock Shake



​The popular McDonald’s Shamrock Shake is only available for a limited time each year, but smoothies are a hit every day in our dairy farm house. So, why not create a healthier version of the Shamrock Shake that the kids can enjoy for breakfast? Loaded with the protein and vitamins in milk, smoothies are a quick way to get tons of nutrition into the kids before they head off to school. I work off the farm, so I often double our smoothie recipes and enjoy mine in the car during my commute. Since there’s kale hiding in this shake, I have no worries about adding a bit of chocolate chips and whipped cream. The kids think they’re having dessert for breakfast because all they taste is creamy, minty goodness.

Very Dairy Shamrock Shake

Servings: 2

Ingredients 1 cup whole milk 2 ripe bananas, peeled and frozen ¾ cups (or 1 6 oz. container) vanilla Greek yogurt ¼ teaspoon peppermint extract (or more to taste) ½ cup frozen chopped kale 2 tablespoons mini-chocolate chips 4-5 drops green food coloring (optional)

Instructions Add all the ingredients to the blender and blend until combined well and smooth. Taste and adjust the peppermint extract to your liking. Pour into glasses and top with whipped cream and mini chocolate chips.

If food coloring isn't your thing, the kale alone will give the shake a pale green tint. You can also substitute fresh kale or fresh or frozen spinach.
